Natural milk, sugar, fresh fruit, dry fruits and chocolate. That is the entire pantry behind every tub and every kulfi stick.
One production floor in Kandivali West, Mumbai. Nothing is outsourced, white-labelled or bought in finished.
Fruit is pulped fresh on site. Pistachio, almond and cashew are cleaned, roasted and cut in-house rather than bought pre-processed.
Small batches are rapid cooled to -18C so ice crystals stay tiny and the texture stays dense instead of airy.
A 1 to 2 week shelf life is the freshness guarantee. Long-life ice cream needs chemistry we refuse to use.
The counter
Milk slow-reduced until it turns nutty and dense, set on a stick with nothing to lighten it.
Reduced milk with pistachio cleaned, roasted and cut in our own kitchen the same week.
Saffron steeped in warm milk, almond slivers folded through at the end. Colour comes from the saffron alone.
Made only while Alphonso is in season, from pulp we press on the floor in Kandivali.
Custard apple deseeded by hand, folded in as pulp so the fruit stays in visible ribbons.

Sanju Kulfi began in 1987. Sanju Icecream was established in 2004 by Mr. Sonu Jayprakash Sharma, carrying forward the legacy of Late Shri. Jayprakash K. Sharma. The business operates today as Sanju Foods Private Limited.
